At the S.A.L.T. kitchen today we are cooking Jamaican jerk steak sandwiches. Go ahead, get all the “jerk” jokes out of your system. I’ll wait.
This class had the most ingredients of all our classes by far. To make the steak’s jerk rub you need:
- lime – zest and juice
- chopped chillies
- ginger
- garlic
- scallions
- thyme
- oil
- brown sugar
- allspice
- salt
- pepper
- cinnamon
- nutmeg
- cumin
Making the rub was as simple as chopping the veggies, adding the spices and oil and mixing. I rubbed both sides of the steak and let rest as we worked on the slaw. The recipe suggests allowing to marinate for 15-60 minutes, but we don’t have time for that in the class.
I forgot to take pictures while making the slaw. The highlight for me was combining pineapple juice and Dijon mustard for the slaw dressing.
This is one of the recipes I am definitely keeping.
Nag Tidbit: The Silver Moon is great, and the Silversea people are wonderful. But you still find little things that annoy you. This is the main staircase.
If you need to change more than one deck, after you change one deck you have to walk 180-degrees around the stairs to the other side to change the next deck. I find myself walking the extra steps to the ordinary stairwell they have rather than frustrating myself with these. I don’t know if there is some kind of safety or crowd control rule, but sheesh.
