The mouth of the Amazon River is around 250 miles (400 km) wide as it empties into the ocean, dumping 20% of the world’s fresh water. Last year’s South America Grand Voyage stopped in Manaus, which is some 1000 miles (1600 km) upriver, and I think next year’s also visits. But we are skipping it this year, which is too bad.

I haven’t been doing as much cooking as they have been repeating some of the classes. That’s fair, Argentine and Brazil have a lot of coastline. But I did some things recently using cassava flour.

First was a meat stew topped with cassava “breadcrumbs”.

Then we made some crepes, but not like I’ve ever seen. You only slightly add water to the cassava flour so that it stays together in the pan. It’s not like wheat flour crepes where you pour it over a curved pan. It was different.

That evening I had more traditional Crepe Suzette, just to be shown up by the professional chefs.
